The Year
1790 - 225 years ago, Ghantewala Sweet shop Opens for business.
As this
historic sweet shop downs shutters in Delhi fast emerging as the gastronomic
Epicenter of India, we feel a sense of loss. For soon it will disappear not
without a trace but sans the “taste” from our collective gastronomic memories. This
for a restaurant where emperors, Prime Ministers, films stars and the rest of us
feasted.
They used to
say of shah Alam II who was King Emperor of India in 1790 – Shehensahe - Shah Alam shenshahi diil – te-
palam. His “empire” extended from his fort to Delhi’s periphery.
Diwali festival
was a busy time they just put bundles of cash into the jute bags no time to count
- Sweet that.
The two
iconic items were
Sohan Halwa an
ultra sweet protein packed dry fruit rich preparation in thickened milk
concoction.
&
Kalakand this
one too is from condensed milk but the sweet flavor is far more subtle.
